When the chips are down...

Lest you think we exist on a diet of salad and sunshine, last night's dinner was all about autumnal comfort. There were spicy beef and garlic sausages from the halal butcher down the street (who is always trying to convince me of the deliciousness of chicken hearts), chips made to the Boy Wonder's special recipe (which I actually taught him but he claims he did it first) and frozen peas (one of the modern world's greatest inventions).

Our life has been all over the place - literally - in the last couple of weeks and this was just what we needed. The only problem with eating this with the Small Girl is that I have to eat really fast in order to stop her eating her share as well as mine.


Homemade Healthy Chips
I dithered for ages about calling these 'healthy', but they really are virtuously good for you compared to double deep goosefat-fried chips (even if they don't taste quite as good). Use Agria or King Edward potatoes (or any potato suitable for roasting or mashing) for best results.

As many potatoes as you think you can eat, plus a few more
Olive oil
Flour
Salt and pepper

Preheat the oven to 200C. Scrub the potatoes and dry them well, then cut into slim wedges. Pat dry. Put them in a plastic bag (like a supermarket bag) and add about 2Tbsp olive oil and 2Tbsp flour. Close the bag and give it a good shake to ensure the potato wedges are evenly coated. Tip the wedges onto a large roasting tray and sprinkle with salt and pepper. Bake for 35-45 minutes, giving the tray a shake every now and then. Serve hot with the comfort food (white bread, sausages, peas) of your choice.

Home made chips are the bees knees in comfort food aren't they. Reckon I'd eat more than my fair share too ;0)

heaven on a plate eh? I love the big fat wedge chips, they're the best and only these will satisfy the hunger! Plenty of sea salt and mayo for mine please!

Say it pizza or pie, whatever my family always needs this chips on side. This is a nice healthy option.

I love homemade healthy chips... though I love bad for you chips more. I'm just too scared of deep fat fryers! x

hey lucy, i tried these wedges tonight and they were pretty good, except since i only had a small bag i did them in batches and ended up adding too much flour...so they were a bit 'dusty'.
dusty but tasty!
